The Marel MS 2730 is an automated filleting machine designed specifically for salmon processing. It maximises yield and accelerates production lines by delivering high-quality fillets with integrated back and belly trimming as standard.
The fish is fed into the machine belly down, allowing for a fast and easy infeed. A built-in system measures the profile and size of each fish, automatically adjusting the electronically controlled cutting tools in real-time. An additional set of circular knives cuts from vent to tail, capturing meat close to the center bone to significantly increase fillet yield. For the belly bone cut, four sets of finger pressures secure maximum control, ensuring optimum cutting of both pre-rigor and post-rigor fillets.
The unit processes up to 25 fish per minute, depending on the length of the fish. It accommodates standard salmon sizes from 1.5 to 8 kg, with an optional small fish kit enabling the processing of fish weighing from 500 g up to 4 kg. The machine is operated via a multilingual color touch screen, streamlining setup and daily operations while maintaining high hygiene standards.
